Seafood Casserole
* 3 tablespoons butter
* 1 1/2 tsp. Butter (separately from above)
* 1 cup chopped onion
* 1 1/2 cups chopped celery
* 2 1/2 cups milk
* 6 tablespoons all-purpose flour
* 4 oz. Cheddar cheese (sliced)
* pinch salt
* pinch black pepper
* 1/4 lb. Crabmeat
* 1/4 lb. Lobster meat
* 1/4 lb.  Shrimp
* 1/4 lb. Scallops 
1.          Preheat oven to 350°
2.          Lightly grease a medium baking dish
3.          Melt 3 tablespoons butter in a skillet and sauté onions and celery until 
         tender. 
4.          Heat milk in saucepan over medium heat.
5.          Mix in flour and 1 1/2 tsp. Butter until well blended.  Gradually blend the cheese into the mixture.  Season with salt and pepper.
6.          In a medium bowl, mix the onions and celery with the cheese sauce mixture.  Put in the crabmeat, lobster, shrimp and scallops and transfer to the 
prepared baking dish.
7.          Bake (uncovered) in the preheated oven 25 minutes, or until the seafood is opaque and the surface is lightly browned.

Appetizer
Artichoke Cheese Dip
* 1/2 cup mayonnaise
* 1/2 can artichoke hearts
* 1/2 cup shredded cheddar cheese
* 1/2 cup shredded Monterey Jack cheese
* 1 tsp. dried dill weed
* pinch of onion salt
* pinch of lemon pepper
 
1.          Preheat oven to 350°
2.          Combine mayo, cheddar cheese, jack cheese, onion salt, dill weed, lemon pepper and artichoke hearts and pour into 2 quart baking dish.
3.          Bake (uncovered) for 30 minutes.

Dessert
Toffee Cookies
* 1 cup butter
* 1 cup packaged brown sugar
* 1 package saltine crackers
* 1 package semisweet chocolate chips
 
1.          Preheat oven to 400°
2.          In a small saucepan over 
medium-high heat melt butter with brown sugar; bring to a boil and remove from heat
3.          Arrange crackers (salt side up) on a jelly roll pan
4.          Pour butter mixture over crackers
5.          Bake in preheated oven for 5 
minutes
6.          Remove from oven and sprinkle chocolate chips over crackers
7.          Bake for another 5 minutes
